Ingredients
  

Main

  • 3 lb. boneless chuck roast
  • 2 Tbs. avocado oil divided use
  • 2 Tbs. steak seasoning such as McCormick Montreal Steak Seasoning

Vegetables

  • 0.5 lb. baby carrots
  • 12 baby potatoes cut in half lengthwise

Instructions
 

  • Remove the roast from refrigeration and unpackage. Rub with 1 Tbs. of avocado oil, then press steak seasoning all over the surface.
  • Let the seasoned roast rest for at least 1 hour at room temperature, uncovered.
  • In a large mixing bowl, toss the carrots and potatoes with the remaining avocado oil; set aside.
  • Preheat the air fryer at 400°F for 5 minutes. Brush air fryer rack with avocado oil.
  • Place roast on the rack and air fry at 400°F for 15 minutes. Turn the roast and surround with vegetables.
  • Reduce temperature to 325°F. Cook for 25-30 minutes more or until internal temp reaches 125-130°F.
  • Check vegetables for tenderness; cook longer if needed. Remove roast and let rest for 30 minutes under foil.
  • Slice roast across the grain. Serve with vegetables on the side.

Notes

Resting is key! Allowing time for residual cooking and muscle relaxation ensures tenderness.
