Instructions
Remove the roast from refrigeration and unpackage. Rub with 1 Tbs. of avocado oil, then press steak seasoning all over the surface.
Let the seasoned roast rest for at least 1 hour at room temperature, uncovered.
In a large mixing bowl, toss the carrots and potatoes with the remaining avocado oil; set aside.
Preheat the air fryer at 400°F for 5 minutes. Brush air fryer rack with avocado oil.
Place roast on the rack and air fry at 400°F for 15 minutes. Turn the roast and surround with vegetables.
Reduce temperature to 325°F. Cook for 25-30 minutes more or until internal temp reaches 125-130°F.
Check vegetables for tenderness; cook longer if needed. Remove roast and let rest for 30 minutes under foil.
Slice roast across the grain. Serve with vegetables on the side.
Notes
Resting is key! Allowing time for residual cooking and muscle relaxation ensures tenderness.
